Top 3 best ever burgers – and how to make them

The Hawaiian burger 

The volcanic beaches of the Pacific Ocean are famous for many things – not least of which is their burgers.

To make four patties you’ll need a mix of one egg, one bunch of fresh chives, a quarter of a cup of Italian flat-leaf parsley, a clove of garlic, one teaspoon of steak spice, a generous pinch of Greek oregano, similar amounts of  hot chilli flakes, salt and pepper to taste and about a lb of mince beef. Keep these in the fridge for a while before introducing them to your BBQ.

It is the topping that really makes these special. You’ll need to prepare mayonnaise by mixing in some salt, black pepper and two chipotle peppers. Toast a brioche bun and put the spicy mayo on the underside of the cooked burger. Top with lettuce, tomato, pickles, with melted mozzarella cheese, bacon and a slice of caramelized pineapple – we told you the prep space would come in handy!

The Moroccan burger

The streets of Marrakech are alive with the scents of sizzling food and they inspire a fairly epic burger.

You definitely want to add some cumin and paprika to your patty mix this time and a pinch of cinnamon is optional.

For extra authenticity (and great flavour) serve up on Moroccan khobz and top with tzatziki and a dollop of humous.

The Mexican burger

If you like it hot, then a Mexican burger is for you. Add plenty of paprika to the patty mix and if you want you can even chop up a chilli in their too. Lift the heat and add some depth with a bit of coriander.

To really make this one of the best burgers ever though, you need to take some time on the toppings. If you have ever been to Mexico then you will now that the guacamole is divine. Simplicity is the key – you just need to avocado, fresh lime juice and a clove of garlic. Mix into a paste and then spread all over the underside of your burger. On top of it you are going to throw some salsa.

You’ll need your prep space again for this. Rustically cut four ripe tomatoes, half a red onion, about 100g of blackeye beans, a dash of olive oil, more lime juice, fresh coriander, chopped chil
li and half a shredded lettuce. A good salsa is as much about texture as it about flavour, so ensure that the tomatoes retain some of their structure and then spoon it on. Finish with as many jalapenos as you like.

Serve piping hot with tequila on standby.
